A bug zapper with dead bugs was found above the food prep area in one Chattanooga restaurant kitchen – bringing the restaurant a nearly failing score.
Osaka Steak and Sushi on Signal Mountain Road scored a 71.
The inspector said they saw an employee cough into their gloved hand then continue to prepare food without washing their hands or changing gloves.
Several tubs of rice had to be thrown out because they were removed from the walk-in cooler unit in the morning to thaw. The person in charge said they do it to make it easier to cook with.
The restaurant was told by the inspector to stop storing utensils in standing water because it was not hot enough.
The inspector noted a bug zapper with dead bugs was above the food prep area.
Dishes were in the handwashing sink making in inaccessible unless employees moved the dishes first.
The inspector said these violations showed the person in charge does not have active managerial control over the kitchen and general food safety.
